Instead of indulging myself in parties where I’d be facing a “wings” bar, nachos & cheese, 7-layer dips and the whole enchilada of fattening foods, I opted on the side of caution by inviting a few friends over for some light snacks as we “watched” the game (ie. the commercials!) The focus was on vegetables, fruit, some chips and pretzels (a necessity) and some healthy options of dill dip as well as “light” quesadillas.
The dill dip comes from a family recipe that we make for most major holidays as part of the pre-dinner menu. It’s one of the most simple recipes there is and takes less than 5 minutes to make!
– 1 cup light sour cream (or Greek Yogurt)
– 1-2 TBSP light mayonnaise
– Dill weed
Mix ingredients above to taste (use more if you’re serving more people) I used Greek Yogurt tonight to cut the fat and calories – it tastes just as good!
Lastly, to make a “light” cheese quesadilla, you can take a simple whole wheat wrap and cut it in fourths. I added a big chunk of mozzarella cheese to each piece and baked for 10-15 minutes. Serve warm and you can add salsa and/or dip for a nice topping!
